Solid Rubrail
I used 3/4" x 1 1/2" hemlock for my rubrails and I thought they followed the curve of the gunnel nicely (with many clamps). I think it is easier to glue and finish/sand than a built up plywood rub rail.http://gallery.bateau2.comdisplayimage. ... 1076&pos=2

Scarfing
If you don't like butt blocks you should consider scarfing the panels. Much cleaner look. If I were to build my V12 again I would scarf the panels. It is harder but it sounds like you have the carpentry skill required. My US$.02.

epoxy in the frig
I overmixed a batch of epoxy and while I was grabbing a beer from the frig in the garage it came to me. I put the excess epoxy in the frig and it delayed the curing until I needed it. Probably 2 hours.
