That's OK, but extremely hard to figure out. You can't go by how many sheets of ply you use, because they are all cut down.
I would just weigh the boat whole and use that +10% or so as your number.

Not really. Remember the wood has weight too. Then you add resin and glass onto it. Fillets don't float either, nor do outboards, cleats, fishfinders..... Nevermind, I just looked up a picture. It looks more like a flatbottom dory then a Garvey. I'd go with 3, atleast 1.5" high.

For slow speed tracking they would need to be significantly deep. I'd say anything less then 1" wouldn't do much good at all. Being a Garvey hull it shouldn't have as bad an issue with tracking as a flat bottom barge. I'd probably do one on either side, and add a rudder set up to the outboard i...

Just a FYI this thread is years old. And 0.75" for just a boat floor on a small craft is insanely heavy. Even on a larger craft I would use maybe 1/2" at most. 3/8" is enough in most cases if properly done and braced.

Hagerty will no longer insure our boats. They are only doing classic wood boats when I called.

I think the cure time might be the biggest issue here. Properly cured closed cell foam should not absorb moisture like a sponge. Water should only be able to penetrate the exposed cells, not wick its way through the structure. I've done similar tests with an other 2lbs foam and great stuff from Home...
