I like to use the sandwich bags. It's worth trying to master I think. Also, I find the more fillets I do the less material I use. My first on an FL 11 were way too big. The C-12 I'm working on looks about right. Some of you who have posted pictures are at a fillet place that I aspire to.

I got the frames in my C-12 and sheetrock screwed them in place throught the side and into the frame. Material is too thin for that. My PC random orbital seized up. I took it apart and freed up the bearing. I'm blowing it out with my small compressor after use. My machine will sew 4 layers of packcloth. It was the only performance criteria. It does that easily. I have not used a real heavy gage thread but will try it. You might make a test run with your machine. Might do the job depending on how you have to lap the seams. I'm counting on the Sailmakers App...

On my FL 11 I did what you did and also epoxeyed to the garage floor. After I got it off the floor I just filpped the sides and made the outside inside. since I wasn't using real bad wood both surfaces were suitable for painting. Worked OK.
