I run 5 x AGM batteries - 3 x on the 112lb trolling motor and 2 x in parallel on the house plus a lead acid start battery = 6 in total. I would like to go lithium but I dont know enough about them. I worry about fires! Fire on a boat scares the crap out of me. If I go lithium I will carry a life raft!

I would keep them! That hull and strakes look very similar to mine in the pics above. My boat does NOT have a skeg, and I don't think one is necessary on a hull with that deadrise - but I can't see negatives to having one. I’d fair first. Epoxy fairing compounds are very strong. I, on the other hand would glue the skeg and strakes to the unfaired glass. Stay safe Michael! :D Having been through more cyclones (hurricanes) than I have fingers and toes, I think you should be OK. 100 km (60 miles) north of the crossing point of a Cat 2 should be out of any real danger zone.
