In addition to calculating expected coverage, I aim for my first batch to be enough for half or less of the glue up. Once I run out I can see how far I actually got and figure out pretty exactly how much more I need as long as I keep applying in the same way.

All epoxies are two part. I have a preference for 2:1 ratio epoxies like system 3 silvertip over 5:1 epoxies like west system. For working with epoxy I find denatured alcohol to be cheaper, less toxic, and just as effective as acetone for almost everything. Did you all need a survey or appraisal first? I have liability coverage but to cover the boat itself my insurance company(amica) said they would but needed an appraisal first to establish the value. Haven't gotten around to it yet.
