Or go crazy & extend the hull 3'...make it everything the 31 could have been. I don't mean to hijack, but is this a doable thing? Cut a boat in half somewhere and graft in a section of hull and splice or add new stringers/frames? I have done it with an older jeep to essentially make a scrambler...

Foam could very certainly work. You would want to do some heavy reinforcement, especially at the transom, and presumably along the keel line. Would foam sandwich be appropriate for the CS25 design? I am not opposed to marine plywood, but I like the idea of foam for cutting, weight, ease of handling and resale value. Ugh, that looks like a lot of work and material down the drain. Improper ratios or underlying resin/glass needed at least scuffing. My .02
