IHMO, put at least a thin layer of glass on ALL exposed surfaces or you risk checking after some time. I am in NY and my meranti 1088 checked after a few years. Then not at all after a layer of 6 oz. glass. Rick

It should tell you in the plans, probably 12 oz. I would stick with the 1088 of either for the hull, my choice would be the Meranti, it's stronger. Rick

Do the wash with a scotchbrite pad and water. This kills 2 birds with one stone, cleaning and removing the gloss from the epoxy, thus giving the next coat some bite. Rick

I found the same thing with plywood pricing. Even with the shipping to western New York, it was cheaper than the fir marine plywood that is available locally. Rick
