Chicagoross, I would say you are doing fine. I made the mistake the other way around: I made huge fillets...just to find out that the fillet pretty much tacks your plywood together and it is the FG tape that gives it the strength. My fillets were huge...the 2" radius that I interpreted the same...

I used poor man's peel-ply, i.e. plastic sheeting. I agree, that you use more epoxy that way, but it leaves a smooth surface.
