Just looked at your bow mold photo and it looks good. So the issue is elsewhere.

I might re lay the panels, side panels first, ensure the sheer is flat back to front, then add the bottom panels and see where they lay.

Something definitely odd here. Lets break it down before you glue anything. Can you put a measuring tape on the side panels at the bow? Is the "top" of the bow mold level with the tops of your frames/sheer? That looks like some serious droopy bow, which, on a flat sheer boat, will be an is...

Josh, be super-careful about the splay of the side panels. Adjust the position/stitches so that they lay as naturally as possible against the forms and transom, all the way to the sheer. I welded and taped and glassed with them splayed and it was a bit of a nightmare getting them corrected. Edit: Oc...

I temp-screwed all my panels to the transom to keep them from moving while I welded. Reading my own notes on this: "On the transom, there was a natural gap on the inside but the outside edges were flush, so I used the syringe to fill the gap on the inside." from https://community.boatbuild...
