Could any of the kayak/ canoe plans be made out of perspex/ clear acrylic or similar to make them transparent?
Seems like these are quite popular and would be fun to see what’s beneath you as you paddle?

Have you considered a lexan insert in the bottom of a regular stitch and glue canoe?

If you decide to go with a whole boat, look up UV curing epoxies. It will enable you to get rapid bonds at great strength.

I was just going to suggest a skin on frame with clear vinyl.
