It doesn't look that bad, it is mostly cosmetic.
I can't see how deep it goes in the glass but I wonder if it is necessary to use any glass. If you do, use the lightest you have left from your previous project, grind to a taper all around and finish with QuickFair.

In your first picture it almost looks to me like (going top down) you have gelcoat, raw glass and then more gelcoat before transitioning to the hull bottom. If that's the case, you probably didn't get into structural glass at all and probably just ground away a bit of mat.
The back corner looks a bit worse. I imagine that if you look closely at the area you will be able to tell if you got into heavier glass. If you did I would try to build that back up a bit before fairing and gelcoating.
Hopefully you can repair the strake without getting into the contours where it meets the bottom. Wouldn't be the end of the world though. Just a little more complex.
Should be a piece of cake compared to replacing a stringer.

Update! I have most of the repairs completed.
Process of repairs
Cleaned out the corner
taped off the area and put a 2 layers of 1208
Next, I beveled back the larger side area
Applied 1 layer of 1208 and 2 layers of 1708
Ground back the corner
Ground down the side with a hand held belt sander to get a baseline
Build up went very well
faired in the corner and side
Applied Gel Coat with duratec gloss additive
Covered the gel coat with PVA and heated up the area to cure the gel coat
Next day I hosed off the PVA and allowed to dry, then I blended the areas in with 800 grit and a buffer
turned out very very nice IMO,
