We a finishing up the settee/salon. Tapes and cleats and a bunch of heavy plywood.

your under seat storage only seems to go ~1/2 way down, the lower 1/2 is accessed from the hulls?

No. That is the cabin sole you see. Don't forget cats have deck clearance to water. Mine is about 17" and the cabin sole is also 6" thick.
The boxes are 23.5" deep for scale.

I assume that 6" holds the frames/bulkheads tying the hulls together and thick enough to be the platform you walk on 'floating' above the water between the hulls, do you have storage in the floor or is it all dead space?

There is all dead space. The Skoota cabin has a very slight vee, like a whopping 3"! In order to build the vee, we built a jig and then glassed the components together. The cabin sole is an odd size and 100.5" wide or just under 8"6", we opted for plascore due to the widths needed, walls close off the plascore edges.
It is basically a double floor. The core is one inch each lift and some small plascore stringers helped us with the spacings.
The cabin does not hold the hulls together, but floats across two of the three main beams of the boat. The aluminum beams are a Sparcraft S830 mast section cut to lengths needed.
Since the vee is only 3"; there was no use in accessing the space inside. It is basically an insulating gap.
Now, you may be wondering. 3"! A lot of work for 3"! Yes, but keep in mind, every inch we lower the bridgedeck is an inch closer to water and slamming. Richard specified a 4" vee. Somewhere in my jig building, I ended up at only 3" and went with it. In a more perfect world; the bottom of the boat would be convex on each side of the vee to allow better wavebreaking.
Another thing to keep in mind is stiffness. You don't want to be on a large boat with a squishy feeling cabin. Building the cabin vee and sole with corecell would have been lighter, but tons more work. You can jump up n down and there is no give to the floor.

Vee section wave breaker
Vee section and ply backbone that sits on the beam. A picture of the thing toward the end of rough building; no fairing.. this has the forward beam socket and the side panels on. It was kind of entertaining lifting it into place and off the bot here. We used some redneck methodology. Tractor of a friends.
You can see the two wavebreakers. The flat scow type and the vee part that tapers back.
Note the ply side panels. Those are used because there is only 7" of strength area above the beam socket and any massive wave hitting the cantilevered section forward could rip theboaf apart there.
