Sometimes I design a small hog in it (concave) to make up for the thickness of the extra glass layers at the transom but never a hook.
I like the last sentence!

I would build about 3 mm of hog; but no hook. All for tapes and fairing..

How does he line up the transom to deal with the bevel for your plans?

What lines did you draw on the stations?

What lines did you draw on the transom.

It looks like the very first station chine step is lower? No?

Can you check the chipboard station? It looks high which makes the step on the first or station look low.

How are you leveling? When I setup my boat, I got really out of whack with a bad level and got mad and went and got a new one and the laser.

It'd be best if u get a cs builder to reply. The chine steps look like they were added later. How did you do that?

See this picture?

Your chine steps look off here. Do the batten notches line up?

So, you have baseline measurements to the keel for each station?

And you have a BL to transom bottom measurement?

If the station measures are right then something ain't level. If the chine steps are both right; my guess is your transom is too high. The bevel looks suspicious.

Also, if the transom is wrong distance to the last station, it may drive the keel up.

good morning I have a question for Jacques I made a sketch and a photo the BL is straight and the keel is straight and I have a gap at station E 5mm and at station D 9mm maybe we have a problem with the translation of inches or inch in millimeters?

What if you Beveled your transom piece? Would all your frames line up correctly with the straight edge if the transom wasn’t there? Or the straight edge came to the front/ bow side of that transom corner. To me it looks like you are close. Ultimately you don’t want any hook or rocker after you have fitted and glassed and faired the panels together. That’s the ultimate aim. The frames are just there to help you get there. The more accurately you set up the jig, the easier that is to achieve but ultimately they are a means to an end. Remember when you tape over the transom to the bottom panels you will have a thicker layer of fiberglass there. In my experience it pays to try and account for this when you set up the panels. But invariably you will have some fairing/ filling to do - you just want it as minimal as possible!
