Haha... oh the sanding... rum, beer and a ton of sand paper. Simple enough

Re: The “Must haves” list
Inlaws got me a set of those for Christmas a couple years ago, they have never been out of the box. Not allowed to use them at work, and I keep forgetting they are there when I am working in the garage.

In addition to what others have said:
Hand planer
Rasp
Ended up using a power planer but still use my hand plane
3 1/2" makita trim saw. Used that for the majority of cutting the ply panels
Hand plane makes fast work on epoxy globs and doesn't require a mask. Just shaves it right down.

Re: The “Must haves” list
Plastic cups. Lots of them.
I mix epoxy by volume, so I like the clear 18oz good quality.(Keg cups)
Even for mixing small batches of epoxy it is nice to have a bit extra room to stir and the tongue depressors reach the bottom.
I also add filler to epoxy in these cups since they are large enough and I keep my batches reasonably sized to avoid excess waste.

Lots of clamps!
Plastic spoons for mixing and the small toddler spoons are great for making filets.
Dremmel tool for tight work
Drop cloth or plastic sheeting to protect areas from epoxy drips
GOOD painter's tape
I also use plastic cups for mixing.
A small diet scale for mixing by weight (Quick Fair).
LOTS of foam rollers and chip brushes.

Here's a small belt sander I picked up and it works great for smoothing out fillets and inside corner work.

Re: The “Must haves” list
One is the best tools you can have when it comes to boat building is patience. You can never have enough and when it comes to epoxy, sanding, painting, fairing or just reading the plans you are always going to need more than you have! And when you need it the most you will almost always run out, so keep plenty on hand.
"that it isn't just an ordinary sort of boat. Sometimes it's a Boat, and sometimes it's more of an Accident. It all depends." "Depends on what?" "On whether I'm on the top of it or underneath it."
