I'm sure I'm not the only one to try this, but just in case I'm wrong...
There have been several places on my build (keel shoe, tight angles inside the cabin) where applying fairing material like micro balloons w/a spatula- spreader etc is impractical. Because of this I've found that a chip brush works well to paint on the micro balloons (as long as the mixture isn't too thick). The brush marks level themselves out as gravity takes over. Brushing on the material also allows you to get consistent application in areas that are difficult to reach.

If the mixture is still self leveling a lot then I have found it could still be a pain to sand compared to a typical fairing mix. No matter what is will still sand, just might take a few more minutes. For tight areas, when I do actually fair stuff, I just wear heavier gloves and use my fingers.
