Why not just cut part of the gunnel out where it interferes with the engine removal? You can save those pieces and just glass them back in later. I think that would be easier than the tight maneuvering you'd have to do to get the engines out. Trying the way they are now is a lot of finicky maneuvering and you'd need a couple other people to help.

That is a good suggestion, Thank you.

I'll be redesigning the cowlings anyway and this is something to think about, even for future maintenance.

Sometimes the cap has to come off for transom repairs. Much depends on if the cap and motorwell are one, and/or if the motorwell is staying in a bracket conversion .

Finally starting to see to good, the bad and, the ugly!

The cap is definitely coming off. All the wood coring is pudding. Gunnel, stringers, deck…etc.
