You have a bang-up job on the hull, will make fairing easier. As a hint if you have not seen it before, get under the boat and tape all the seams before you start gluing them on the outside.

Great job! What are those little red wedges? They look like they help align the panels and give a proper gap all at the same time.

They are tile leveling wedges (DTA tile lippage system).
As you say, they align the panels to the same plane and create a 1mm gap between panels.
Not sure if that 1mm is an issue but for me seems worth the trade off.

Now all glued and coated in initial coat of epoxy.

No xtra tape on transom to hull bottom? I suppose that would reduce the chance for hook.

Some more progress. I got 2 full layers on the outside.
