That is one big boat! You are making progress just keep after it. One question what is your plan for keeping it dry from rain or even dew?

Not to double down, but you do not want to encapsulate moisture under epoxy. Even the best marine plywoods are not designed to be laminated wet. Wet or tropical laminations rot from within, so be aware of the risks.

I have a tent large enough to cover it. It's going up the weekend. It was just easier to install the bottom and sides without the tent in the way. Until I get the tent up, it's covered with a tarp.

Made good progress today. Have all the panels pulled into position. One issue I need to fix, I have ~ 1/8" hook mid ship that I need to shim out.

Hook can be caused by the sides opening up. Find the deepspot and try to ratcjet the sides in and see what happens.
Otoh, if the sides are fair; shim it. A wider gap is easy to fix with epoxy putty.

It sounds more like you have a dip rather than hook. Hook implies a low area from the transom that causes the boat to dig in and slowdown In the center of the boat just fill it with epoxy and balloons or Quick Fair.

I am starting to look at steering systems for the boat. Is it worth the added expense to install a hydraulic system or is a mechanical system sufficient? It looks like I will have a 140 HP motor on the boat.
I also noticed the post concerning the skeg length on a DE23, should I consider stopping the skeg ~ 2 ft short of the transom?
